Brunlee’s Best Maple Apple Blondies

These blondies are the perfect autumn recipe for sharing. Flavored with warm apple caramel, thick maple glaze, and Spiced Vanilla Extract

Ingredients

For the blondies 
1¾ cup all purpose flour
1 tsp baking powder
1 tsp salt
½ cup unsalted butter softened
1 cup vegetable oil
1¼ cups light brown sugar
1 large egg
1 tbsp spiced vanilla extract
1 tsp cinnamon
 
For the apple filling
2 large (honeycrisp, gala, fuji) apples chopped finely
2 tbsp light brown sugar
2 tbsp unsalted butter
½  tbsp spiced vanilla extract
½ tbsp lemon juice
1 tbsp maple syrup
1 tsp cornstarch
1 tsp salt
1 tsp cinnamon
(optional)  ½ tsp nutmeg
 
For the maple glaze
2 Tbsp unsalted butter
¼ cup maple syrup
1 ½ cups powdered sugar
½ tsp salt
½  tbsp spiced vanilla extract

Preparation

Preheat oven to 350 coat 11x7 or 9x9 pan with butter or oil.
 
For the apple filling
Dice apples into small ½ inch cubes. In a medium bowl, mix all apple cubes and all remaining apple filling ingredients except for butter. 
On med-low heat, melt butter and slightly brown until fragrant but not fully browned. Add in apple mixture and cook for about 5-8 minutes. Pull off heat and allow to cool briefly. The loose caramel will thicken slightly as it cools. 
 
Blondies
  • Cream butter until light and fluffy, about 1 minute. Add in brown sugar and salt, and mix until well combined.
  • Add in the egg, oil, and vanilla extract one at a time, mixing in between. 
  • In a separate bowl, mix flour, baking powder, and cinnamon together. dAdd to the wet ingredients and stir until combined.
  • In the bottom of the pan, spread half the blondie batter evenly. Then, using a spatula, spread apple filling all over the layer.
  • Top with remaining blondie batter and spread evenly.
  • Bake for 25-30 minutes, or until the top is golden brown and a cake tester comes out clean.
  • While the blondies are baking, prepare the maple glaze. 

Maple Glaze

  • Melt butter, maple syrup, vanilla extract, and cinnamon over medium-low heat. Once melted together and bubbling vigorously, pull off the heat. Sift in powdered sugar, and whisk until fully combined. Allow to cool for 5 minutes so the glaze can thicken.
  • Once the blondies are out of the oven, pour the glaze over the top and let cool.
  • Lastly, slice into squares and enjoy!
