Brunlee’s Best Bourbon Berry Crumble

This zesty, warm, berry filled crumble is a fan favorite. They are flavored with fresh blueberries and blackberries, a hint of citrus, and our rich Bourbon Vanilla Extract

Enjoy this recipe alongside a cold scoop of vanilla icecream, a hot toddy, or perhaps a cozy blanket and a good book. 

Ingredients:

For The Filling:
18oz. (2¼ cups) fresh blueberries
12oz. (1½ cups) fresh blackberries
1 ½  tablespoons cornstarch
1 ½ tablespoons flour
¾ cup of light brown sugar
Zest from whole lemon
Juice from ½ lemon (about 1 Tbsp)
¾ cup orange juice
2 tablespoons bourbon vanilla extract
¼ teaspoon ground cinnamon and/or nutmeg
¼ teaspoon kosher salt
 
For The Crumble
1 cup old-fashioned rolled oats
¼ cup sliced and toasted almonds
½ cup all purpose or almond flour
¼ tablespoons light brown sugar
2 tablespoons of softened, salted butter
2 tablespoons bourbon vanilla extract
 
For The Bourbon Whipped Cream
1 cup chilled heavy whipping cream
1 tablespoon powdered sugar
2 tablespoons bourbon vanilla extract
2 tablespoon chilled maple syrup

Instructions:

  • Preheat the oven to 375 degrees F.
  • In a medium sized bowl, mix cornstarch, flour, light brown sugar, salt, cinnamon, and lemon zest completely. Then, toss the blueberries and black berries in the dry mixture until they're evenly coated. 
  • In a single 4 cup measuring cup, mix lemon juice, orange juice, and bourbon vanilla extract. 
  • Pour wet ingredients into the berry and dry ingredient mixture and mix just until combined.
  • In a separate bowl, combine the dry topping ingredients and mix, then add softened butter and vanilla extract and mix until combined and crumbly.
  • Pour the berry filling into a 1 quart dish (or 4 cup-sized ramekins). Spread the topping evenly over the berries and place in the oven.
  • Cook for 1 hour, then remove from the oven. Optionally, drizzle a small amount of bourbon extract or your own bourbon over the finished crumble before setting to cool for 30 minutes. Serve while still warm, or chill for later serving.
